Hi Pat-
My go-to lens for outdoor work is with the 85mm f/1.2L. The amount of blur (or, what is technically called "bokeh") is achieved based on a combination of length of lens, the lens' aperture setting, and positioning of subject in relation to you and their backgrounds. Catchlights are achieved with proper positioning to the light source (typically for me, the sun).

Your photos are really great. I have an SLR and would love to know what lens you use to get the blurry backgrounds. And how do you get that twinkle in their eyes?
